
Nordhavn Coffee
Nordhavn Coffee began working with Vinca Jatirasa through a curated selection of washed Indonesian coffees. They were drawn to the farm’s ability to produce clean and structured lots at higher elevations. This became the foundation of a long term sourcing relationship.
The coffees supplied to Nordhavn are primarily fully washed Typica and Bourbon varieties grown above 1,300 MASL. Cherries are selectively handpicked and depulped within hours of harvest. Controlled fermentation is maintained for up to 24 hours to preserve clarity.
After fermentation, the beans are thoroughly washed and dried slowly on raised beds for up to 14 days. This extended drying process ensures even moisture reduction and stability. The result is a consistent green bean profile suited for light roasting.
In the cup, these coffees present bright citrus acidity with herbal undertones and a clean finish. The structure remains sharp yet balanced, allowing subtle sweetness to emerge as the coffee cools. This profile aligns closely with Nordhavn’s precise roasting philosophy.
