Preparing for the 2026 Coffee Farm Competitions
Preparation begins with identifying specific high elevation plots known for producing dense and complex cherries. These areas benefit from slower maturation due to cooler temperatures, resulting in beans with greater potential for clarity and depth. Only uniform and fully ripened cherries are selected from these plots.
Processing methods are then tailored to highlight the best attributes of each lot. Fully washed processes are refined with controlled fermentation times to enhance cleanliness and brightness. In parallel, anaerobic fermentation is applied to selected batches to develop more complex aromatic compounds.
Each lot undergoes multiple cupping sessions at different stages, from initial drying to final resting. This allows the farm to evaluate flavor development and stability over time. Adjustments are made when necessary to achieve the desired balance.
Participation in the 2026 competitions is viewed as both a performance and a learning process. It provides an opportunity to benchmark quality against global producers while refining internal standards. For Vinca Jatirasa, this is part of a continuous effort to elevate its presence in the specialty coffee landscape.
